Celebrate Mardi Gras At Home With These Big Easy Recipes

New Orleans is a big party all year long, but never more so than on Mardi Gras, or “Fat Tuesday," the day before Ash Wednesday, which begins the 40 days of Lent for Catholics and other Christians. Whether or not you observe the season, all are welcome at the party. The Carnival celebration kicks off with Twelfth Night (the Feast of Epiphany), and revelers laissez le bon temps roulez all the way to Mardi Gras with bead-flinging parades, decadent floats, glamorous and hedonistic masked balls, and lots and lots of good food.

You don't have to be in the Big Easy to celebrate with a festive dinner rich in Creole and Cajun culinary traditions. With Spice Islands® flavors, you can create a feast fit for the king and queen of the ball!

Most importantly, enjoy the ride: Mardi Gras is all about freewheeling fun, so plan your menu accordingly.

Start by mixing up a big batch of bourbon milk punch and playing some Zydeco tunes, then serve do-ahead Cajun crab quiche or crab cakes, followed by a crowd-pleasing Cajun jambalaya or Louisiana gumbo.

For dessert, a king cake is easy to make—use a traditional frosted cinnamon roll recipe, shape into a ring before baking, and top the frosting with the colors of Mardi Gras (with purple, green, and yellow colored sugar). Don't forget to hide a small plastic baby inside—the lucky recipient of that piece brings next year's cake!

 

 

Big Batch Bourbon Milk Punch

  • 3 cups powdered sugar
  • 1/2 gallon ice-cold whole milk
  • 1-1/2 cups bourbon
  • 2 Tbsp vanilla
  • Grated nutmeg, for garnish

In a large bowl or pitcher, whisk powdered sugar and milk together until sugar dissolves. Add vanilla and bourbon and whisk well. Chill thoroughly and serve over crushed ice with grated nutmeg on top.
