Christmas Dinner: The Main Event

The star of the holiday show is the centerpiece meat, with side dishes orbiting in support. With more options for variety than at Thanksgiving, you're free to choose from a range including beef, poultry, lamb and pork. Consider the number of people you're serving and your loved ones' personal preferences when choosing a recipe. If it's your first time experimenting with a new cut of meat, consider a test run the week before to alleviate holiday stress .

Encrusted Prime Rib

The holidays offer just the right excuse for indulging on a boneless beef rib roast. Whip out this recipe for encrusted prime rib with a coating of mustard and spices. A Dijon and rosemary-spiked cream sauce is drizzled over the beef for an elegant finish.

Perfect Holiday Roast Turkey

Didn't get enough turkey for Thanksgiving? Why not let this poultry masterpiece be center stage again with the ease of Spice Islands® Brine Kit and turkey rub. A whole turkey, up to 25 pounds, is seasoned courtesy of the brine kit, with the Spice Islands® Turkey Rub easily adding a notch of sage and garlic flavor.

Sweet and Spicy Rub for Roasted Chicken

For smaller holiday gatherings, consider opting for one or two roasted chickens as the entrée, like this Roasted Chicken doused in an array of spices like paprika and cayenne pepper. This homemade rub could also be used for Cornish hens if you wanted each guest to have an individual bird.

Citrus Glazed Ham

Go for a Southern holiday tradition in the form of a bone-in ham, like this citrus glazed ham. Orange peel, cloves, cinnamon and cayenne pepper come together in a syrup-like glaze over the ham. And better yet, devour the leftovers stuffed into a biscuit for days of breakfast or lunch.

Crown Roast with Double Fennel Stuffing

Want a pork option that isn't ham? Consider a crown roast pork, a magnificent cut of meat that looks stunning out of the oven filled with stuffing. Choose between this double fennel stuffing recipe studded with fennel seeds and fresh fennel or this holiday-friendly stuffing with the tang of dried cranberries and the sweetness of dried apricots.

Leg of Lamb with Herbs

Who says lamb is reserved just for Easter? It can also serve as a spectacular main for the holidays, like this leg of lamb with herbs. Spice Islands® crushed rosemary and dried thyme, in addition to minced garlic, are stuffed into a butterflied leg of lamb for herby goodness in every bite.
