Create Pumpkin Seed Magic

Tempted to toss away the insides of your jack-o'-lantern? Turn those seeds into unmitigated deliciousness by incorporating them into recipes the whole family will love.

First, use a large spoon to transfer the seeds and pumpkin flesh into a bowl. Then, using your hands, remove the stringy pumpkin pieces from the seeds, discarding the flesh. It's an involved task, so don't expect to remove every bit of pumpkin. Spread the seeds onto a nonstick baking sheet. Add a few tablespoons of olive oil plus an array of salt and spices onto the baking dish; use clean hands to combine until the seeds are thoroughly covered with oil and seasonings. Place the baking sheet into an oven preheated to 350° F. Roast until seeds are golden, approximately 10 minutes, rotating the pan in the oven halfway through the cooking time. Store in an airtight container until eaten.
