Fall Grilling

Fall Grilling

Guess what: It's harvest time, and swimsuit season is in our rearview mirror. Do you know what that means? It's time to layer up, gather with friends and family around a grill, and eat with abandon. Hearty fall produce, available at your local farmers' market or maybe in your backyard garden, lends itself to smoke and fire in surprising ways. In trendy restaurants around the country, chefs are treating ingredients like Brussels sprouts, eggplant, garlic, and even fruits like apples and pears, to the deep char treatment.

Combine their rich flavors with the scent of smoke lingering in clear autumn air, and gather your friends around the fire for another story. Find tips from Bon Appétit's special 2015 Grilling Issue, and guarantee the most relaxed and cozy season of your life.

Assemble Your Tools

The cooking term "mise en place," meaning to "put in place," has made its way from professional kitchens all the way to your backyard. Gather and prepare all the tools and food you need to complete your mission in advance, and you'll thank yourself once the fire is ripping. Here's your must-have grilling equipment, according to Bon Appétit:

  • Stainless-Steel Tongs and Spatula
  • Instant-Read Thermometer
  • Basting Brush
  • Metal Skewers
  • Barbecue Mitt
  • Charcoal Chimney
  • Grill Brush
  • Grill Basket

Two Is Better Than One

Whether you like the ease of a gas grill or prefer lump charcoal made from real hardwood or instant briquettes in a classic kettle grill, maintaining a two-zone fire is key. Keep one side superhot for quick-searing (hello, crispy-edged Grilled Steak with Chimichurri) and the other side cooler for slow-cooking (take your time, Chicken Thighs with Chipotle Bourbon Sauce).

Rub the Right Way

When you want to travel beyond the realm of salt and pepper, add layers of flavor by massaging spice rubs and seasoning salts into meats before, during and after grilling. Make life easy by preparing batches in advance, and store mixtures in airtight glass containers showcasing hues of paprika and chile in all their exotic glory. Use Spice Islands® rub recipes as your foundation for bold flavor, and explore from there. By delving into the flavors of the grill all autumn long, you'll get the best of multiple seasons in one. An endless summer amid crisp, cool air? It's totally possible, and we're right there with you.
