When you do the math, you might be inclined to think that Thanksgiving dinner offers a paltry return on what you put into it: days of planning, shopping, chopping, dicing, mashing, roasting, and baking for a meal that's over before you can say "pass the cranberry sauce."

Add leftovers into the equation, though, and your investment starts to look a lot more profitable. All that roasted turkey, stuffing, and pie is like money in the bank. Feast for days on soups, sandwiches, and creative reimaginings of what was on the Thanksgiving table, and you'll reap the rewards for many meals to come.

Cranberry sauce is great on turkey sandwiches, of course, but it also makes a lovely breakfast parfait layered with Greek yogurt and granola. You might even find ways to sneak leftovers into dishes undetected. Gravy adds a savory richness to casseroles, and roasted vegetables can find a home in shepherd's pie or stews. It's doubtful you'll have leftover pie (we never do!), but if you do, rather than just illicitly eating it for breakfast, try blending it into a milkshake for a decadent treat your resident or visiting teenager will love.

Turkey offers the biggest payoff for later reinvention. Simmer a big pot of Turkey and Wild Rice Soup, which freezes well to enjoy all winter long, or Turkey Tortellini Soup for watching the big game. Turkey Flatbread with Cranberry Salsa is out of the ordinary and casual, perfect for drop-in guests, and Turkey and Dressing Fluffins pack up great for post-holiday lunches. All of this will have you counting the days until next Thanksgiving.

Convinced? While you're planning this year, err on the side of abundance and count your blessings all the way into December.
