Tacos the Texas Way

There's no denying that Texas knows tacos. They might have been invented south of the border, but cooks in the Lonestar state have made it their mission to perfect them. To understand the state of the taco in Texas, first you must acknowledge its vast geography, and the many variations on the dish within those borders. For a taste of that special spice that Texas brings to the taqueria table, try these highlights below, and continue your explorations from there.

Crispy Tacos

Long before Taco Tuesday was a thing, kids from El Paso to Beaumont grew up eating classic crispy tacos for comforting midweek dinners. Bring back or introduce this classic to your own home with Cheeseburger Tacos. For a little more flair, add an extra pinch of spicy steak seasoning while browning the meat.

Breakfast Tacos

Wrapped in a warm, soft flour tortilla, a well-made breakfast taco is the next best thing to being cozy under the covers. Fill with any combination of scrambled eggs, refried beans, chorizo, bacon and fried potatoes, mixing and matching as you like. Just don't forget to pile on the chipotle roasted salsa.

Puffy Tacos

Traditional taco fillings in a puffy, deep-fried corn masa shell? Yes, please. Make your own by combining fresh masa with water and a pinch of salt to create an almost-sticky dough. Press the tortilla and drop into a deep fryer. Press in the center with a spatula as it fries to create a fold. Drain on paper towels, then fill with picadillo, shredded lettuce, chopped tomato and grated cheese.
