As we prepare to sit down with our families to enjoy an abundant Thanksgiving meal, here's a heartwarming thought: Throughout the land, millions upon millions of our fellow citizens will do the same. On one day a year, we all talk turkey.

But does a Thanksgiving table in a home on the Louisiana bayou look just like one on Beacon Hill in Boston? Not exactly. Along the Gulf Coast in the South, stuffing is studded with plump oysters, and in the Southwest, cranberry sauce is spiked with chiles.
