Avocado Gazpacho

6 cups


2 avocados, finely chopped

1 cup cut-up (1/2-inch) papaya

1 chayote squash, finely chopped

1/2 cup finely chopped green bell pepper

1/4 cup minced scallions

2 tablespoons minced red onion

1 tablespoon Spice Islands® Crystallized Ginger

1/2 teaspoon Spice Islands® Crushed Red Pepper

2 cups tomato juice

1-1/4 cups pinapple juice OR mango nectar

Several grinds Spice Islands® Sea Salt and Black Pepper Adjustable Grinder

1/4 cup chopped fresh cilantro


Combine all ingredients in a large bowl. Chill a minimum of one hour.

To serve: ladle into individual serving bowls; sprinkle with desired amount of chopped cilantro.
