Belgian Endive with Asian Shrimp

12 to 15 endives

Ingredients

1/4 teaspoon Spice Islands® Ground Ginger

1 cup cooked, chopped shrimp

2 tablespoons crushed pineapple, drained

1-1/2 teaspoon Spice Islands® Beau Monde Seasoning

1/4 teaspoon Spice Islands® Crushed Red Pepper

2 tablespoons mayonnaise

1/8 teaspoon sesame oil

1 head Belgian endive, rinsed and patted dry

Chives, sliced 1 inch

Instructions

Stir together ginger, shrimp, pineapple, Beau Monde Seasoning, crushed red pepper, mayonnaise and sesame oil in a medium mixing bowl.  Let chill 15 minutes.

Spoon a tablespoon of shrimp mixture into the base of an individual Belgian endive.  Top with one or two pieces of chive.

Tip:  For the more adventurous spirit, add a few drops of Chinese chili or fish sauce to the shrimp mixture.

Variation:  Replace ground ginger with finely minced lemongrass.
