Ingredients

1 cup brown rice

1 medium green bell pepper, chopped

1 medium red onion, thinly sliced

1 medium Granny Smith apple, cored, chopped

1/4 cup drained capers

1/2 cup slivered almonds, toasted

3/4 cup currents OR golden raisins

1/3 cup white wine tarragon vinegar

2 tablespoons sugar

1/2 teaspoon salt

2 teaspoons Spice Islands® Garam Masala

1 teaspoon Spice Islands® Ground Mustard

1/2 teaspoon Spice Islands® Ground Ginger

1/2 teaspoon Spice Islands® Ground Cardamom

1/2 teaspoon ground mace

1/4 teaspoon Spice Islands® Fine Grind Black Pepper

1/4 teaspoon Spice Islands® Cayenne Pepper

1/4 teaspoon Spice Islands® Ground Saigon Cinnamon

3/4 cup olive OR vegetable oil

Instructions

Prepare rice according to package directions.

Combine rice, pepper, onion, apple, capers and almonds in a large serving bowl.

Mix vinegar, sugar, salt and spices in a food processor until combined. Slowly add oil through tube until dressing is creamy and oil is completely incorporated.

Pour dressing over rice mixture; stir. Chill a minimum of 2 hours before serving.
