Cinnamon Spiced Chicken with Peanut-Mango Salsa

Ingredients

1 tablespoon Spice Islands® Ground Saigon Cinnamon

2 teaspoons Spice Islands® Grilling Gourmet Spicy Chicken Seasoning

2 teaspoons Spice Islands® Curry Powder

6 boneless, skinless chicken breasts

1/2 cup coarsely chopped salted, roasted peanuts

2 cloves garlic, minced

1/2 teaspoon Spice Islands® Chili Powder

1/2 teaspoon extra virgin olive oil

1 pound mangoes, peeled and cubed

1/3 cup minced fresh cilantro

3 tablespoons lime juice, fresh

Instructions

Combine cinnamon, spicy chicken seasoning and curry powder in a shallow bowl. Coat chicken breasts evenly with the rub; cover and refrigerate a minimum of 1 hour.

Place peanuts, garlic, chili powder and olive oil in small saucepan. Toast ingredients over medium heat for 2 minutes. Transfer to medium sized bowl; add mangoes, cilantro and lime juice. Toss to combine. Cover and place in refrigerator.

Preheat grill to medium heat. Spritz chicken breasts with cooking spray, place on preheated grill and grill for 7 minutes. Turn and grill an additional 4 minutes or until chicken is done.

To serve, top each chicken breast with an equal amount of salsa.
