1 package (4 ounces) unflavored gelatin

1/4 cup cold water

3/4 cup heavy whipping cream

2 teaspoons sugar

1/4 teaspoon Spice Islands® Pure Vanilla Extract

2 tablespoons Spice Islands® Crystallized Ginger

1/4 teaspoon Spice Islands® Ground Ginger

1 teaspoon freshly grated lemon peel

2 boxes (15 count, each) mini-phyllo shells

2 ounces finely chopped bittersweet chocolate

2/3 cup finely chopped mango


Preheat oven to 350°F.

Dissolve unflavored gelatin in water; set aside.

Beat cream with an electric mixer until stiff peaks form. Stir in sugar, vanilla, finely chopped crystallized ginger, ground ginger, and lemon peel. Mix 1 tablespoon whipped cream into the gelatin; fold gelatin back into bowl of whipped cream. Chill for at least one hour.

Bake mini phyllo shells on a baking sheet for 5 minutes; cool.

Melt unsweetened chocolate in a heavy bottomed saucepan over low heat. Fill the bottom of each shell with approximately 1/4 teaspoon melted chocolate.

Divide chilled ginger cream mixture between each shell.

Top with finely chopped mango pieces. Serve immediately.
