Lemon Bread Pudding with Lemon Sauce

Ingredients

Pudding

2 cups milk, warm

1/4 cup butter, melted

2 eggs, beaten

3/4 cup sugar

1/4 teaspoon salt

1 teaspoon Spice Islands® Ground Saigon Cinnamon

1/2 teaspoon Spice Islands® Ground Allspice

1/4 teaspoon Spice Islands® Ground Nutmeg

1 tablespoon Spice Islands® Pure Lemon Extract

1 teaspoon Spice Islands® Pure Vanilla Extract

Optional 1/4 teaspoon Tone's® Imitation Coconut Flavoring

5 cups raisin bread cubes

1/2 cup raisins

Lemon Sauce

1 cup sugar

1 tablespoon all-purpose flour

1/2 cup light cream

1/2 cup butter

1 tablespoon Spice Islands® Pure Lemon Extract

1/2 teaspoon Spice Islands® Pure Vanilla Extract

Instructions

Preheat oven to 350ºF.

Combine warm milk and butter in a large mixing bowl. Add eggs, sugar, spices, extracts, bread cubes and raisins. Pour into a greased 2-quart baking dish. Bake for 40 minutes or until a knife inserted near the center comes out clean. 

Lemon Sauce:
Mix sugar, flour, cream, and butter in a medium saucepan. Bring to a boil, stirring constantly, over medium high heat. Boil for 2 minutes, stirring occasionally. Remove from heat; stir in lemon and vanilla extracts.

To serve, pour warm lemon sauce over each serving of bread pudding.
