Oatmeal Raisin and Toffee Cookies

Ingredients

1 cup butter OR margarine

1 cup brown sugar

1/2 cup sugar

2 eggs

1-1/2 teaspoons Spice Islands® Pure Vanilla Extract

1-1/2 cups all-purpose flour

1 teaspoon baking soda

1 teaspoon Spice Islands® Ground Saigon Cinnamon

1/4 teaspoon Spice Islands® Ground Cloves

1/4 teaspoon Spice Islands® Ground Ginger

1/4 teaspoon Spice Islands® Ground Nutmeg

1/2 teaspoon salt

3 cups old fashioned oats

1 cup golden raisins

1-1/3 cups flaked coconut

1/2 cup finely chopped pecans

2/3 cup toffee bits

Instructions

Preheat oven to 350°F.   

Mix butter and sugars together until creamy.   Beat in eggs and vanilla until fluffy.  Whisk together flour, baking soda, cinnamon, cloves, ginger, nutmeg and salt.  Add to butter mixture and beat until blended.  Stir in oats, raisins, coconut, pecans and toffee bits.  

Drop rounded tablespoonfuls of dough on a lightly greased baking sheet.  Bake cookies for 10 to 12 minutes or until golden brown.  Cool on a wire rack.
