Instructions

Combine rice, chicken broth and saffron in medium saucepan.  Cover and bring to a boil; reduce heat to a simmer.  Cook 15 to 20 minutes until rice is tender and liquid is absorbed.  Pour rice into a shallow pan and refrigerate at least 20 minutes.

Combine olive oil, vinegar, garlic powder, onion powder, thyme, salt, paprika and black pepper in a small bowl.  Combine cooled rice, shrimp, tomato, green bell pepper and onions in a large bowl.  Add dressing and mix well.

Serve immediately or refrigerate until ready to serve.


Recipe Note:  Rice can be cooked ahead and chilled.
