Pork with Apple Chipotle Glaze

Ingredients

1/2 cup apple jelly

1/3 cup balsamic vinegar

1/4 cup brown sugar

1/2 teaspoon Spice Islands® Chipotle Chile Powder

1/2 teaspoon Spice Islands® Pasilla Chile Powder

1 pound pork loin

1/2 teaspoon Spice Islands® Garlic Powder

2 tablespoons Mazola® Pure Olive Oil

Instructions

Bring jelly, vinegar, brown sugar, ground chipotle and pasilla chilies to a boil in a heavy saucepan. Reduce heat and simmer 15 to17  minutes or until sauce is reduced to 2/3 cup.

Slice pork loin into 4 equal portions (1 to 1-1/2 inches thick). Season with salt, pepper and garlic powder.

Heat oil in a large skillet over medium-high heat; add pork and saute until interior reaches minimum temperature of 150ºF; turning once.

Baste or drizzle pork with chipotle glaze. Serve with mashed potatoes or seasoned plantains.
