Pound Cake with Tropical Fruit Compote

Ingredients

2 cups cubed fresh pineapple (about 1 pineapple)

1 cup cubed fresh papaya (about 1 papaya)

1 cup cubed fresh kiwi (about 3 kiwi)

1/2 cup cubed mango (about 1 mango)

3 tablespoons fresh lime juice

2 tablespoons light rum

1 tablespoon sugar

2 teaspoons freshly grated Spice Islands® Whole Nutmeg

1 prepared pound cake

Instructions

Combine pineapple, papaya, kiwi and mango in a large bowl. Stir in lime juice, rum, sugar and nutmeg. Chill in refrigerator a minimum of 30 minutes to blend flavors.

Spoon over sliced pound cake.

Recipe Note: Whole nutmeg that has been finely grated gives the freshest flavor, however, ground nutmeg may be substituted.
