Salmon in Parchment

3 tablespoons butter OR margarine, softened

1 teaspoon Spice Islands® Dill Weed

1 teaspoon Spice Islands® Tarragon

1/2 teaspoon salt

Dash Spice Islands® Ground White Pepper

4 salmon fillets (1-1/2 to 2 pounds)

1/4 cup thinly sliced green onions

1 lemon, thinly sliced


Preheat oven to 450°F.

Combine butter, dill, tarragon, salt and white pepper in a small bowl. 

Cut 4 sheets of parchment paper, about 4 times as wide and 6 inches longer than the salmon.  Place a piece of salmon in center of parchment paper.  Spread one fourth the butter over the salmon.  Sprinkle green onions and top with several slices of lemon.  Wrap parchment up and around fish and seal seam by making small folds.  Roll up ends of parchment and tuck under fish.  Place packet on baking sheet.  Repeat with remaining fish.

Bake for 10 to 12 minutes or until fish is just cooked through.  Cut a small slit through parchment into the fish to check.
