Sesame Ginger Truffles

Ingredients

1 cup heavy cream

2 tablespoons butter

8 ounces bittersweet chocolate, broken into pieces

8 ounces semi-sweet chocolate, broken into pieces

2 tablespoons Spice Islands® Crystallized Ginger

2 teaspoons Spice Islands® Ground Ginger

2 teaspoons Spice Islands® Pure Vanilla Extract

1 bottle (2.5 ounces) Spice Islands® Sesame Seeds

Instructions

Heat cream and butter over medium-high heat in a saucepan until mixture is simmering. Reduce heat to low and add chocolates; stirring continually until chocolate is melted. Add crystallized ginger, ground ginger and vanilla. Chill for at least 2 hours, until chocolate is solid.

Pour sesame seeds into a shallow baking pan. Toast at 350°F for 5 to 7 minutes until lightly browned. Cool completely.

For best results, use a small scooper (3/4-ounce) and scoop each truffle. (Or, use a spoon and greased hands to shape a walnut sized ball). Place in sesame seeds and roll to coat. Chill until ready to serve.
