Spiced Meringues with Chocolate Sauce

4 egg whites

1/4 teaspoon Spice Islands® Cream of Tartar

1/2 teaspoon Spice Islands® Pure Vanilla Extract

1 cup sugar

1-1/2 tablespoons unsweetened cocoa

1/4 teaspoon Spice Islands® Ground Saigon Cinnamon

1/4 teaspoon Spice Islands® Ground Ginger

1/4 teaspoon Spice Islands® Ground Allspice

1/4 teaspoon Spice Islands® Ground Nutmeg

1/8 teaspoon Spice Islands® Ground Cloves

1/3 cup whipping cream

1/8 teaspoon Spice Islands® Cayenne Pepper

8 ounces bittersweet chocolate, coarsely chopped


Preheat oven to 300ºF. Line a large baking sheet with parchment paper.

Beat egg whites, cream of tartar and vanilla in a mixer bowl until soft peaks form. Combine sugar, cocoa and spices in a separate small bowl. Gradually add sugar mixture to egg whites, beating until stiff peaks form.

Spoon into 3-inch mounds on to a baking sheet. Bake for 35 minutes. Turn off oven and let meringues dry with the door closed 1 hour. Remove baking sheet to a wire rack.

Chocolate sauce:
Heat whipping cream and cayenne pepper in a small saucepan and bring to a boil. Reduce heat and gradually add chocolate stirring constantly until it is melted. Divide meringues among 6 plates. Drizzle chocolate sauce over meringues. If desired, garnish with fresh mint and berries.
