Street Tacos with Napa Cabbage (and other variations)

Heat a large, nonstick skillet over medium-high heat. Add ground beef; sprinkle with chili powder, cumin, oregano and salt.  Cook and stir 5 to 7 minutes breaking up the meat with a spoon and distributing the seasonings evenly.    Remove from skillet when crumbles are no longer pink; cover and keep warm.

Wipe skillet with a paper towel; spray with cooking spray and heat over medium-high heat.  Place 2 corn tortillas in skillet. Sprinkle with approximately 2 tablespoons cheese per tortilla. Top with another tortilla and warm in skillet about 2 to 3 minutes or until cheese is melted. Remove from skillet; repeat with remaining tortillas and cheese. Top tacos with seasoned meat and desired toppings.

Tacos with Napa Cabbage

Top warmed tortillas with shredded cabbage, seasoned beef, onions, tomatoes, cilantro and drizzle with Mexican Crema.

Salsa Verde Tacos

Spread approximately 2 tablespoons salsa verde over warmed tortillas. Top with shredded lettuce, seasoned beef, onions and radish slices; drizzle with Mexican Crema.

Tacos with Cheddar and Queso Fresco

Replace Chihuahua cheese with shredded cheddar cheese when warming tortillas in skillet. Top warmed tortillas with seasoned beef, lettuce, fresh salsa and queso fresco.

*Recipe Note:  If using ground turkey, heat 1-1/2 tablespoons corn oil in the skillet.  Add ground turkey and continue with recipe above.
