Wild Mushroom and Spinach Crepe

Ingredients

8 Basic Crepes (see recipe link below)

Wild Mushroom and Spinach Filling

2 tablespoons olive oil, divided

1/4 cup finely chopped shallots

3 cups coarsely chopped wild mushrooms, such as baby bellas, shitake, etc.

1/2 teaspoon Spice Islands® Thyme

1/2 teaspoon Spice Islands® Garlic Powder

Salt and pepper

1/4 cup dry sherry

4 cups chopped fresh spinach

1 teaspoon Dijon mustard

2 hard cooked eggs, chopped

Blue Cheese Bechamel Sauce

2 tablespoons butter

3 tablespoons all-purpose flour

3 cups milk

1/2 teaspoon salt

1/4 teaspoon black pepper

1 tablespoon dry sherry

1/3 cup blue cheese crumbles

Generous shavings Spice Islands® Whole Nutmeg

Instructions

Heat 2 teaspoons olive oil in a large skillet over medium heat; add shallots and sauté 3 to 5 minutes. Add remaining oil and mushrooms. Sauté an additional  5 to 7 minutes. Season with thyme, garlic powder, salt and pepper to taste.

Add sherry.   Remove from heat.  Stir in spinach and Dijon mustard.  Mix in chopped egg.

Preheat oven to 350°F.

Bechamel Sauce:
Heat butter in large heavy bottomed saucepan over medium-high heat until melted. Whisk in flour; reduce heat and cook one minute, whisking constantly. Stir in milk slowly; whisking constantly. Heat until sauce is thickened, about 10 minutes. Add salt, pepper, sherry and blue cheese.

To Assemble:
Spread 1/2 cup bechamel sauce in the bottom of a glass 13 x 9-inch baking dish. Place approximately 1/4 cup mushroom spinach filling lengthwise of one crepe. Roll up and place seam side down in baking dish. Repeat with remaining filling and crepes.

Pour sauce over crepe; shave whole nutmeg generously over the top. Bake for 20 to 25 minutes. Remove from oven; let rest 5 minutes before serving.

Variation:  Use 6 individual casserole dishes.  Put 2 tablespoons sauce in the bottom and top with with 2 crepes.  Pour sauce over the top and bake for 15 to 20 minutes.
