Black Bean and Rice Tacos

8 tacos


3/4 cup converted white rice

2-1/2 cups water

1 package or 3 tablespoons Spice Islands® Gourmet Taco Seasoning

1 package (12 ounces) frozen corn

1 red bell pepper, diced

1 can (15 ounces) black beans, drained and rinsed

8 whole wheat tortillas

Toppings- queso fresco cheese, reduced fat sour cream, salsa and fresh cilantro


Combine rice, water, seasoning and corn in a large saucepan.  Cover, bring to a boil and reduce heat to a simmer for 15 minutes.  Add black beans and red bell pepper and cook 5 minutes or until rice is tender.

Portion into tortillas.  Top with queso fresco, sour cream, salsa and cilantro. 

Recipe Note:  If Spice Islands® Taco Seasoning is not available in your local market, try our Taco Seasoning recipe.  Use 2 tablespoons in this recipe.
