Caramel Glazed Baked Plantains

3 medium plantains, fully ripe (black) and soft

1/3 cup brown sugar

6 tablespoons butter, melted

1 teaspoon Spice Islands® Pumpkin Pie Spice


Preheat oven to 350°F.

Grease an 8-inch square baking dish.

Peel ripe plantains as you would a banana. Trim ends. Cut each plantain crosswise on the diagonal in 1/2-inch oval slices. Place in baking dish – slices will overlap slightly.

Combine brown sugar, butter and pumpkin pie spice in a small bowl. Drizzle evenly over plantains. Bake until plantains are golden brown and tender, about 30 to 40 minutes. Cool slightly, about 10 to 15 minutes. Serve warm. To serve, scoop plantains and syrup into individual bowls; top with ice cream.

Recipe note: Plantains become sweeter as they age, so it is important to have very ripe plantains. To speed the ripening process, place plantains in a paper (not plastic) bag and let sit at room temperature until skins are black.
