Cashew and Fruit Cereal Bars

1/4 cup Spice Islands® Sesame Seeds

2 cups old fashioned oats

4-1/2 cups crispy rice cereal

2 cups cashews

1 cup chopped dried fruit- mangoes, apricots, cherries, etc.

1/2 cup pepitas (pumpkin seeds) OR sunflower seeds

1/2 cup butter OR margarine

1/2 cup cashew butter

1 bag (10 ounces) marshmallows

2-1/2 teaspoons Spice Islands® Ground Saigon Cinnamon

1/4 teaspoon Spice Islands® Ground Ginger

1/4 teaspoon Spice Islands® Ground Nutmeg

1/8 teaspoon Spice Islands® Ground Cloves

Dash Spice Islands® Ground White Pepper


Toast sesame seeds in large (6-quart) pot over medium heat until lightly toasted, about 2 to 3 minutes, stirring frequently.  Pour into large bowl.  Toast oats in the same pot over medium heat until lightly toasted, about 4 to 5 minutes.  Add to large bowl with sesame seeds, crispy rice cereal, cashews, dried fruit and pepitas.

Add butter to pot and melt over low heat.  Stir in cashew butter, marshmallows and spices until melted.  Add cereal fruit mixture and mix well.  Pour into 13 x 9-inch pan that has been sprayed with cooking spray.  Let bars cool for at least 30 minutes before cutting.
