Curried Chicken Salad

3 cups cooked, chopped chicken

1 cup chopped celery

1/2 cup raisins

1 cup chopped Granny Smith apple (about 1 medium)

1/4 cup cashews

1 cup mayonnaise

2 teaspoons Spice Islands® Curry Powder


Mix chicken, celery, raisins, apples and cashews in large bowl. Combine mayonnaise and curry powder in a small bowl; mix thoroughly. Stir mayonnaise into chicken mixture. Chill a minimum of 30 minutes to blend flavors.


Recipe Tip: Purchased rotisserie chicken, chopped makes this quick and easy!
