Fish Tacos with Mango Salsa

Mango Salsa

1 mango, peeled and diced

1 jalapeno, seeded and finely diced

1/4 cup chopped cilantro

1/2 lime, squeezed

Seasoned Fish

1-1/2 teaspoons Spice Islands® Chili Powder

3/4 teaspoon Spice Islands® Ground Cumin

3/4 teaspoon Spice Islands® Garlic Salt

1/2 teaspoon brown sugar

1 tablespoon Mazola® Corn Oil

1 pound tilapia fillets

8 corn tortillas (6-inch)

1 avocado, sliced


Combine all Mango Salsa ingredients (salsa can be made several hours ahead).

Combine chili powder, cumin, garlic salt and brown sugar in a small bowl;  mix well.  Heat oil in large skillet over medium heat and add tilapia.  Sprinkle fish with half the seasoning.

Cook 2 to 3 minutes, until fish has browned.  Turn and sprinkle with remaining seasoning.  Cook 2 to 3 minutes until tilapia is cooked through. 

Portion fish into tortillas, top with Mango Salsa and avocado slices.
