Gingered Peach Creme Brulee

2 cups heavy cream

1/2 teaspoon Spice Islands® Ground Ginger

4 egg yolks

2 tablespoons sugar

2 teaspoons Spice Islands® Pure Vanilla Extract

3/4 cup (about 1 large) diced fresh, peeled peach

2 to 3 tablespoons Spice Islands® Crystallized Ginger

1/4 cups brown sugar


Preheat oven to 325°F.

Scald cream and ground ginger using a double boiler, if available.

Whisk eggs, sugar and vanilla in a separate bowl. Temper eggs by
mixing 2 tablespoons of hot cream into the yolk mixture. Stir
the tempered yolks into the cream. Strain cream.

Finely dice the crystallized ginger.  Evenly divide the peaches and crystalized ginger between 6 porcelain ramekins. Top with custard mixture. Place ramekins in a 1-inch hot waterbath.

Bake for 45 to 50 minutes. Remove ramekins from water bath
and cool on wire rack 10 minutes. Refrigerate a minimum of
one hour.

Just before serving, sprinkle 2 teaspoons brown sugar evenly
over each ramekin. Broil ramekins for 2 to 5 minutes until
sugar is melted. Serve immediately.
