Grilled Jerk Pork

1 medium fresh lime, juiced

2 tablespoons Mazola® Corn Oil

1 tablespoon sugar

2 tablespoons Jerk Seasoning Blend (see recipe link below)

1 to 2 habanero peppers, finely chopped*

1-1/2 teaspoons Spice Islands® Sea Salt Adjustable Grinder

1 pork tenderloin, about 1-1/2 pounds

1 red onion, thinly sliced

4 scallions, minced


Place lime juice, oil, sugar, Jerk Seasoning Blend, habaneros and sea salt in a resealable plastic bag; let sit 5 minutes for flavor to develop. Add tenderloin, onion and scallions. Refrigerate a minimum of 30 minutes.

Preheat grill to medium-high heat. Remove tenderloin from marinade and place on grill; discard remaining marinade. Grill over direct heat 15 to 20 minutes or until internal temperature reaches a minimum of 155°F.

Remove from grill; tent with foil for 10 minutes before slicing.

* Use caution when handling habanero peppers.  Gloves are recommended.
