Mediterranean Halibut

4 medium roma tomatoes

2 tablespoons black olives, chopped

2 teaspoons Spice Islands® Minced Onion

2 teaspoons Spice Islands® Sweet Basil

1/2 teaspoon Spice Islands® Garlic Powder

2 tablespoons olive oil

3 tablespoon lemon juice

1/4 cup white wine

4 (6 to 8 ounces each) halibut steaks

1/2 cup crumbled Feta cheese


Heat oven to 425ºF .

Combine tomatoes, olives, onion, basil, garlic, olive oil, lemon
juice and white wine in a medium bowl; set aside.

Place halibut in a non-stick baking pan. Top with tomato mixture; sprinkle feta cheese over tomatoes. Bake 12 to 14 minutes, or until fish flakes easily with a fork.

Recipe Note: You may substitute tuna or swordfish fillets for the halibut.
