Perfect Holiday Roast Turkey

8 to 16, depending on size of turkey


1 whole turkey, up to 25 pounds, thawed

1 package Spice Islands® Turkey Brine Kit

1 package Spice Islands® Turkey Rub


Rinse thawed turkey and remove giblets. 

Dissolve brine mix in 4 quarts of water in a large pot over medium heat.  Do not boil.  Cool to room temperature. 

Place turkey in brine bag.  Set turkey and bag into an ice filled cooler, large roasting pan OR large stockpot for support.

Pour cooled brine plus 4 quarts of ice water into brine bag and seal tightly.  Brine in refrigerator OR ice filled cooler for 1 hour per pound of turkey.

About 30 minutes prior to roasting, preheat the oven to 325°F.

Remove turkey from brine.  Rinse turkey with water and pat dry.  Place turkey on a baking sheet or in a shallow pan to season.  If desired, brush surface of turkey with oil or melted butter. Evenly rub contents of seasoning rub over entire surface of turkey - sprinkle a little in the cavity too!

Place turkey in a roasting pan.  Roast in preheated oven per manufacturer's instructions, until done.
