Saffron Rice Pudding

8 servings (4 cups total)


1 cup long grain rice

2 cups water

1/2 teaspoon salt

10 to 12 threads Spice Islands® Saffron

1 cup whole milk OR light cream

3/4 cup sugar

1/4 cup butter

1/2 teaspoon Spice Islands® Ground Cardamom

1/4 teaspoon Spice Islands® Ground Cloves

1/4 cup golden raisins

1/4 cup finely chopped pistachio nuts

1/4 cup finely chopped almonds


Cook rice in water with salt and saffron until tender.

In separate saucepan combine milk with remaining ingredients. Heat on low stirring constantly until sugar is dissolved and butter is melted.

Pour warm milk mixture over rice and let simmer on low for 5 minutes. Serve warm with sweetened whipped cream, if desired.
