Shrimp Tacos

8 tacos


2 tablespoons Mazola® Corn Oil

1 red onion, thinly sliced

1 green bell pepper, sliced

1 cup frozen corn

1-1/2 pounds large raw shrimp, tails removed

1 package or 3 tablespoons Spice Islands® Gourmet Taco Seasoning

8 tortillas

Toppings as desired- sliced jalapenos, chopped cilantro, lime wedges and sour cream


 Heat 1 tablespoon oil in large skillet over high heat and add onions and peppers.  Cook for 1 to 2 minutes and add corn.  Cook for 1 to 2 minutes.

Push vegetables to half the skillet; add remaining 1 tablespoon oil.  Add half of the shrimp.  Cook 2 to 3 minutes, turning shrimp once.  Place shrimp on top of vegetables.  Add remaining raw shrimp and cook 1 to 2 minutes.  Add seasoning and 2/3 cup water.  Cook 2 to 3 minutes until thickened.

Portion shrimp into tortillas and top jalapenos, cilantro, fresh lime and sour cream.

Recipe Note: If Spice Islands® Taco Seasoning is not available in your local market, try our Taco Seasoning recipe. Use 2 tablespoons in this recipe and just 2 tablespoons water.
