Taqueria Style Chicken Tacos

12 tacos


1 tablespoon Mazola® Corn Oil

1 pound boneless, skinless chicken breasts

2 tablespoons Taco Seasoning (see link below)

1/4 cup water

12 corn tortillas (6-inch)

3/4 cup crumbled queso fresco

Radish slices

Fresh cilantro

12 lime wedges


Heat oil in large skillet over medium heat and add chicken.  (If chicken breasts are very thick, cut horizontally through the breast with a sharp knife to create 2 thinner breasts).

Cook 8 to 10 minutes, turning once, until cooked through.  Remove to plate or shallow bowl and let cool 2 to 3 minutes.  Shred chicken using 2 forks and return chicken to skillet.  Add seasoning and water.  Cover and cook 5 minutes.

Portion chicken into tortilla shells and top with queso fresco, radish slices and fresh cilantro.  Serve each taco with a wedge of lime.
