Tuscan Green Beans

1 pound green beans, fresh OR frozen


3 tablespoons olive oil

1 ounce (1/4 cup) salami, sliced and cut into thin strips

1 garlic clove, finely chopped

1 large tomato, chopped

2 tablespoons red wine vinegar

1 teaspoon Spice Islands® Oregano

Salt and pepper


Cook green beans, as desired, until crisp-tender; drain.  Transfer to serving bowl; set aside and keep warm. 

Heat oil over medium heat in medium skillet until hot; cook and stir salami and garlic 3 to 4 minutes or until garlic is golden. 

Stir in tomato, vinegar and oregano; cook until sauce is hot, stirring occasionally.

Season with salt and pepper, as desired.  

Pour sauce over beans; serve immediately.
