The coriander plant gives us two spices, coriander and cilantro. Cilantro comes from the leafy portion of the plant, while coriander comes from the seeds. Although they share a common source, you’d never know it from their flavors.

Cilantro has a complex flavor with hints of pepper, sage and lemon. A versatile herb, it’s used in everything from traditional Indian curries and Asian stir-fries to Mexican salsas.

Like many herbs, cilantro’s flavor diminishes the longer it’s exposed to heat. So be sure to add it at the end of cooking.
