Brussels Sprouts Salad Recipe

Ingredients
For the vinaigrette:
- 1/3 cup orange juice
- 1/3 cup olive oil
- 2 tbsp white wine vinegar
- 2 tbsp shallot, minced
- 1 tbsp dijon mustard
- 2 tsp Spice Islands Orange Peel
- 2 tsp honey
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1/4 tsp Spice Islands Garlic Powder
For the salad:
- 1lb brussels sprouts, mandolin sliced (or thinly sliced)
- One bunch of kale, chopped into bite sized pieces
- 1/2 cup pomegranate arils
- 1/2 cup almonds, chopped
- 1/4 cup parsley, chopped
- Parmesan, shaved (for topping)
Directions
- In a large bowl, or mason jar, combined orange juice, olive oil, vinegar, shallot, dijon, orange peel seasoning, honey, salt, pepper and garlic powder and mix until well combined.
- Add brussels sprouts, kale, pomegranate arils, almonds, and parsley to the bowl and mix well with vinaigrette.
- Top with shaved parmesan.
