Ingredients

For the vinaigrette:

For the salad:

  • 1lb brussels sprouts, mandolin sliced (or thinly sliced)
  • One bunch of kale, chopped into bite sized pieces
  • 1/2 cup pomegranate arils
  • 1/2 cup almonds, chopped
  • 1/4 cup parsley, chopped
  • Parmesan, shaved (for topping)

Directions

  1. In a large bowl, or mason jar, combined orange juice, olive oil, vinegar, shallot, dijon, orange peel seasoning, honey, salt, pepper and garlic powder and mix until well combined.
  2. Add brussels sprouts, kale, pomegranate arils, almonds, and parsley to the bowl and mix well with vinaigrette.
  3. Top with shaved parmesan.
