Garlic and Herb Roasted Chicken Recipe

Ingredients
- 1 whole chicken, 5-6 lbs., giblets removed
- 2 Tbsp. unsalted butter, softened
- 2 Tbsp. + 1 tsp. Spice Islands® Garlic and Herb Seasoning Blend
- 4 large carrots, sliced
- 1 yellow onion, sliced
- 1 lemon, sliced or wedged
- 1 Tbsp. Crisco® Canola or Vegetable Oil
Directions
- Preheat oven to 425°
- Dry the chicken with paper towel, then rub with the softened butter.
- Sprinkle 2 Tbsp. of the seasoning blend over the chicken and rub to make it adhere.
- In a large bowl, combine the carrots, onion, oil and remaining 1 tsp. seasoning blend. Toss to coat the vegetables.
- Pour the mixture into a cast iron skillet, or heavy baking dish.
- Place the rubbed chicken on top of the vegetables then place lemon slices around the edges.
- Bake for 15 minutes then, without opening the oven, reduce the temperature to 350°F and bake an additional hour or until the internal temperature of the thickest part is 180°
- Allow to rest for 10 minutes before slicing.
- Serve with the vegetable mixture.
