Garlic and Herb Roasted Chicken Recipe

  1. Preheat oven to 425°
  2. Dry the chicken with paper towel, then rub with the softened butter.
  3. Sprinkle 2 Tbsp. of the seasoning blend over the chicken and rub to make it adhere.
  4. In a large bowl, combine the carrots, onion, oil and remaining 1 tsp. seasoning blend. Toss to coat the vegetables.
  5. Pour the mixture into a cast iron skillet, or heavy baking dish.
  6. Place the rubbed chicken on top of the vegetables then place lemon slices around the edges.
  7. Bake for 15 minutes then, without opening the oven, reduce the temperature to 350°F and bake an additional hour or until the internal temperature of the thickest part is 180°
  8. Allow to rest for 10 minutes before slicing.
  9. Serve with the vegetable mixture.
