Garlic and Herb Roasted Vegetables Recipe

Ingredients
- 1 lb. fingerling or baby red potatoes, halved
- 1 lb. carrots, peeled and cut into 1-inch pieces
- 12 oz. green beans or asparagus
- 3 Tbsp. olive oil
- 2 Tbsp. Spice Islands® Garlic and Herb Seasoning Blend
Directions
- Preheat the oven to 400°
- In a large bowl, combine the potatoes, carrots, 2 ½ Tbsp. oil and 1 ½ Tbsp. seasoning blend and toss to coat.
- Spread out onto a large baking sheet and bake for 20 minutes.
- In the same large bowl, combine the green beans and the remaining ½ Tbsp. oil and ½ Tbsp. seasoning blend. Toss to coat.
- After 20 minutes, sprinkle the green beans on top of the potatoes and carrots and bake an additional 20 minutes or until the vegetables are tender.
