
Green Goddess Feta Flatbread Recipe

Ingredients
- 2 each pre-made flatbreads or naan
- 2 tbsp olive oil, divided
- ½ cup plain Greek yogurt
- 1 ½ tbsp Spice Islands® Green Goddess Seasoning, divided
- 1 cup cherry tomatoes, halved
- ¼ cup red onion, slivered
- 1 cup arugula
- ¼ cup crumbled feta cheese
- 1 tbsp Balsamic glaze, garnish
Directions
- Preheat the oven to 375°F
- In a small bowl, whisk together Greek yogurt with 1 tbsp of Spice Islands® Green Goddess Seasoning. Set aside.
- Heat 1 tbsp olive oil in a skillet over medium-high heat. Add the cherry tomatoes, ½ tbsp Spice Islands® Green Goddess Seasoning and cook for 3–4 minutes, stirring occasionally, until they soften and develop slight char marks, stir in red onion and remove from heat.
- Brush the flatbreads lightly with the remaining 1 tbsp olive oil and warm them in the oven for 5–7 minutes, or until slightly crisp.
- Spread the Green Goddess yogurt mixture evenly over each warm flatbread. Top with fresh arugula, blistered cherry tomatoes and onions, and crumbled feta cheese.
- Drizzle with balsamic glaze for a touch of sweetness.
- Slice and serve immediately as a fresh and flavorful appetizer, lunch, or light dinner.
Tips
For an extra crispy base, toast the flatbreads directly on a grill or in a hot skillet before adding the toppings. This gives them a slight char and added flavor!
