Green Goddess Zoodle Primavera Recipe

Ingredients

  • 3 cups zucchini, spiralized (or your favorite pasta)
  • 3 tbsp olive oil, divided
  • ½ cup mushrooms, sliced
  • ½ cup tri color mini bell peppers, thinly sliced
  • 3 tbsp Spice Islands® Green Goddess Seasoning, divided
  • ¼ cup red onion, sliced thin
  • 1 cup small broccoli florets, steamed
  • 1/4 cup Parmesan cheese, grated

Directions

  1. Spiralize the zucchini into thin noodles. Place the zoodles on paper towels to absorb excess moisture and set aside.
  2. Heat 2 tbsp of olive oil in a large skillet over medium heat. Add the, red onion, slice bell pepper, mushrooms, and sauté until softened, about 3–4 minutes.
  3. Stir in 2 tbsp of Spice Islands® Green Goddess Seasoning, followed by the steamed broccoli florets. Cook until heated through, about 2–3 minutes.
  4. Push the sautéed vegetables to one side of the skillet and add the remaining 1 tablespoon of olive oil. Add the zucchini noodles to the skillet and sprinkle with the remaining tbsp of Spice Islands® Green Goddess Seasoning. Stir gently to combine with the vegetables.
  5. Cook the zoodles for 2–3 minutes, just until they are tender but not mushy. Remove from heat.
  6. Serve immediately, topped with grated Parmesan cheese.

Tips

To avoid soggy zoodles, salt the zucchini noodles lightly after spiralizing and let them sit for 10–15 minutes on paper towels. The salt draws out excess moisture. Pat them dry before cooking to maintain a crisp, tender texture in your dish!
