Ingredients

  • 1 lb. Gemelli pasta, cooked (or your favorite pasta)

Meatballs

  • 1 lb. ground chicken or turkey
  • 1/3 cup breadcrumbs
  • 1 egg, lightly beaten
  • 2 tbsp Spice Islands® Green Goddess Seasoning
  • ¼ cup Parmesan cheese, grated
  • 1 tbsp fresh parsley, chopped

Sauce

  • 1 tbsp unsalted butter
  • ½ cup sundried tomatoes in oil, drained, roughly
  • chopped
  • 3 tbsp sundried tomato oil
  • 4 cloves garlic, minced
  • ¼ cup onion, diced
  • 1 tbsp Spice Islands® Green Goddess Seasoning
  • 1 ½ cups chicken broth
  • 1 cup heavy cream
  • ½ cup Parmesan cheese, grated
  • 2 tbsp fresh parsley chopped

Directions

  1. Preheat the oven to 400°F and line a baking sheet with parchment paper.
  2. Cook the Gemelli pasta according to package instructions, reserving ½ cup of the pasta water, then drain and set aside.

Meatballs

  1. In a large bowl, combine the ground chicken or turkey, breadcrumbs, egg, Spice Islands® Green Goddess Seasoning, Parmesan cheese, and parsley. Mix until just combined.
  2. Form the mixture into 1-inch meatballs and arrange them on the prepared baking sheet.
  3. Bake for 18–20 minutes, or until fully cooked and lightly browned.

Sauce

  1. In a large skillet, melt the butter with sundried tomato oil over medium heat.
  2. Add the garlic, onion and Green Goddess Seasoning. Sauté until fragrant, about 1–2 minutes.
  3. Stir in the sundried tomatoes, chicken broth, and heavy cream.
  4. Simmer for 5–7 minutes, stirring occasionally, until the sauce slightly thickens.
  5. Mix in the Parmesan cheese until melted and smooth.
  6. Serve – Add the baked meatballs to the skillet, gently tossing to coat them in the sauce.
  7. Stir in the cooked pasta, mixing to combine. If the sauce is too thick, add the reserved pasta water a little at a time until the desired consistency is reached.
  8. Garnish with extra Parmesan cheese, and parsley.

To ensure perfectly tender meatballs, avoid overmixing the ingredients. Gently combine until just incorporated— this keeps the meatballs light and juicy!
