  1. Remove roast from refrigerator and place on a tray or platter.
  2. Sprinkle the seasoning blend on the roast, covering the top, bottom and sides of the roast.
  3. Allow the roast to come to room temperature (about 1 hour).
  4. Preheat oven to 450°
  5. In an oven safe skillet, heat the oil over med-high heat for 30 seconds.
  6. Add the onions and sauté for 3-5 minutes or until they just begin to brown.
  7. Turn off the heat and place the roast on top of the onions.
  8. Bake for 15 minutes then reduce the oven temperature to 325°
  9. Cook for an additional 25-30 minutes for a medium cooked roast. Larger or thick roasts may take longer. Always use an instant read thermometer to check the internal temperature.
  10. Remove the pan from the oven when the internal temperature is 5 degrees below your desired level of doneness.
  11. Transfer the roast to a cutting board and allow to rest for 10 minutes.
  12. Serve with the cooked onions if desired.
