Ingredients
- 1 package spaghetti sauce mix, traditional
- 1-3/4 cup water
- 1 can (6 ounces) tomato paste
- 1 tbsp oil
- 1 lb boneless, skinless chicken breast, cut in 1/2-inch strips
- 1 tsp Spice Islands Ground Cumin Seed
- 1 can (15 ounces) black beans, drained and rinsed
- 1-1/2 cup frozen corn
- 2 can (4 ounces each) green chilies
- 12 oz small pasta OR spaghetti, cooked according to package directions
Optional:
- 1/8 tsp pepper, red ground
- 2 tbsp fresh chopped cilantro
Directions
- Prepare spaghetti sauce mix with water and tomato paste according to package directions. Keep warm.
- Heat oil in skillet. Add chicken and stir-fry over medium high heat until meat is cooked through. Add the cooked chicken, cumin, black beans, corn, and chilies to the spaghetti sauce; mix. Heat through.
- Serve over hot pasta and sprinkle with ground red pepper and cilantro, if desired.
