Roast Beef Recipe

Ingredients
- 2 lbs. top round roast
- 2 Tbsp. Spice Islands® Salt, Pepper, & Garlic Seasoning Blend
- 1 Tbsp. Crisco® Pure Canola Oil
- 1 lg. red onion, sliced
Directions
- Remove roast from refrigerator and place on a tray or platter.
- Sprinkle the seasoning blend on the roast, covering the top, bottom and sides of the roast.
- Allow the roast to come to room temperature (about 1 hour).
- Preheat oven to 450°
- In an oven safe skillet, heat the oil over med-high heat for 30 seconds.
- Add the onions and sauté for 3-5 minutes or until they just begin to brown.
- Turn off the heat and place the roast on top of the onions.
- Bake for 15 minutes then reduce the oven temperature to 325°
- Cook for an additional 25-30 minutes for a medium cooked roast. Larger or thick roasts may take longer. Always use an instant read thermometer to check the internal temperature.
- Remove the pan from the oven when the internal temperature is 5 degrees below your desired level of doneness.
- Transfer the roast to a cutting board and allow to rest for 10 minutes.
- Serve with the cooked onions if desired.
