Carrot Cucumber Pickle Recipe

Delicious Carrot Cucumber Pickle.

  • 1 cup water
  • 3/4 cup rice vinegar
  • 1-1/2 tbsp sugar
  • 1/2 tsp Sea Salt Adjustable Grinder
  • dash Spice Islands Ground White Pepper
  • 2 cup shredded carrots
  • 1 cup shredded, unpeeled cucumber


  1. Combine water, vinegar, sugar, sea salt and white pepper in a sauce pan. Bring to a boil over medium-high heat; cool to room temperature.
  2. Place carrots and cucumbers in a mixing bowl; stir in cooled vinegar mixture. Marinate for one hour. Drain vegetables thoroughly.
  3. Store in a sealed container in the refrigerator for up to 2 weeks.
