Ingredients
- 3 tablespoons olive oil, plus more for topping
- 2 tablespoons balsamic vinegar
- Salt and freshly ground pepper
- 1 small cantaloupe, sliced into wedges or cubes
- 2 ripe peaches, pitted and sliced into wedges
- 1 cup cherry tomatoes, halved
- 2 cups baby arugula
- 3 balls (6 ounces) burrata cheese, torn into pieces
- Spice Islands Sweet Basil
Directions
- In a large bowl, whisk together 3 tablespoons olive oil and balsamic vinegar. Season with salt and pepper.
- Add in cantaloupe, peaches, cherry tomatoes and arugula. Toss well to coat just before serving.
- Top with torn burrata cheese. Drizzle with extra olive oil, salt, pepper and sweet basil to finish.
