Pork with Apple Chipotle Glaze Recipe

Ingredients
- 1/2 cup apple jelly
- 1/3 cup balsamic vinegar
- 1/4 cup brown sugar
- 1/2 tsp Spice Islands Ground Chipotle Chile
- 1/2 tsp Ground Ancho Chile
- 1 lb pork loin
- 1/2 tsp Spice Islands Garlic Powder
- 2 tbsp Pure Olive Oil
Directions
- Bring jelly, vinegar, brown sugar, ground chipotle and pasilla chilies to a boil in a heavy saucepan. Reduce heat and simmer 15 to17 minutes or until sauce is reduced to 2/3 cup.
- Slice pork loin into 4 equal portions (1 to 1-1/2 inches thick). Season with salt, pepper and garlic powder.
- Heat oil in a large skillet over medium-high heat; add pork and saute until interior reaches minimum temperature of 150ºF; turning once.
- Baste or drizzle pork with chipotle glaze. Serve with mashed potatoes or seasoned plantains.
