Vanilla Shortbread Cookies Recipe



For Icing 

  • 1 3/4 cups of confectioners sugar
  • 3 tbsp milk
  • 1 tsp Spice Islands Pure Vanilla Extract
  • 1/4 tsp salt
  • Food coloring (optional)
  • Spice Islands Poppy Seed (optional)


  1. Pre-heat an oven to 350 degrees F.
  2. In a bowl of a stand mixer (or with a hand mixer) beat the softened butter on medium speed until fluffy. Then add sugar, salt, and vanilla extract and beat until well combined. With the mixer on low speed, slowly add the flour and mix until the dough just comes together.
  3. Wrap the dough with cling wrap in the fridge for at least one hour.
  4. While the dough is chilling, make the icing. To a large bowl, add confectioners sugar, milk, salt and vanilla extract and mix. The consistency should be thick enough so that it does not run off the cookie. Add any food coloring to your desire.
  5. After chilling, unwrap the shortbread cookie dough, roll out until its about a half-inch thick, and stamp out dough using circular cookie cutter, then place cookies on baking sheet lined with parchment paper.
  6. Bake cookies for 10 minutes and let cool before covering with icing. Optional top with Poppy Seed.
