Cream of tartar helps give structure and stability to whipped egg whites and adds fluffiness to baked goods like meringues, and is a key ingredient in baking powder. Also known as tartaric acid, it comes from fermented grapes and is collected from the inside walls of wine barrels used during aging. Pure vanilla extract, including the Spice Islands brand, doesn’t really go bad. Thanks to its high alcohol content, it can last for years and years when kept sealed in a cool, dark place. Over time, it may lose some of its flavor and strength or develop a bit of harmless sediment, but it’s still safe to use. If it smells faint or looks slightly cloudy, it’s still fine for baking, just keep in mind the vanilla flavor may not come through as strongly.
